Cynthia, our edible's expert, got together with cafe chef Daniel Escalle, to create an AMAZING spicy pineapple pico de gallo recipe featuring our beautiful lemon drop peppers. Spicy Pineapple Pico
- 3 Lemon Drop peppers, (or hot Serrano peppers) thinly sliced
- 2 heirloom tomatoes, diced
- 1/2 red onion, thin julienne
- 1/2 fresh pineapple, diced
- 1/4 cup cilantro, chopped
- 3 limes, juiced and zested
- salt to taste
Mix all items in a bowl and enjoy cold with your favorite corn tortilla chips!
